For make a very delicious barbeque chicken the best way is to add a specific sauce and make same preparation process for barbeque. Different methods can be used to get the chicken ready for the barbeque. One method is to marinate the chicken in a flavored sauce such as lemon pepper or teriyaki which will be better described in this article.

Teriyaki is a popular Japanese marinade basically used for fish and for this reason; I am not going to describe the original Japanese recipe which is most appropriate for fish barbeque. On the other hand, there are many teriyaki chicken barbeque recipes that are very popular all around the Asia and also in western countries, where the ingredient list is a little bit different. Instead the original Japanese way for teriyaki barbeque is to broil the meat on a pan; the chicken teriyaki usually is making on the grill.

In the Asian way the main ingredient in teriyaki sauce is the mirin, which makes the characteristic flavor. For a better barbeque chicken, people like to remove the bones at begin of the preparation and the chicken meat is usually also sliced as well.

Basically traditional teriyaki is a sweet soy sauce with mirin and sugar. For about 3/4 lb of chicken breasts and thighs the most traditional recipes are:
- 4 tbsp (tablespoon) soy sauce
- 2 tbsp sake
- 4 tbsp mirin
- 2 tbsp sugar
- 1 tbsp vegetable oil

For the best barbeque chicken you can add a pinch of grated ginger or some extra ingredients such as sesame or garlic, as you like.

Preparation method:
1. Put the soya sauce, sake and mirin in a bowl.
2. Add the sugar and mix with a spoon.
3. Put the chicken into the bowl and dip it in the preparation.
4. Leave to marinate for about 15/20 min.
5. Heat the oil in a pan and put the chicken. Brown the chicken until done.
6. When the chicken is almost cooked, pour the teriyaki sauce into the pan and leave the chicken to cooking until it gets glazed.
7. Pour the remaining sauce from the pan on the teriyaki chicken and serve it on a plate with rice, salad or vegetables that can also be marinated in the same teriyaki sauce.

Most of western teriyaki barbeque chicken recipes using different sauces instead of mirin, the most used are Tabasco sauce. The following recipe is very popular in America and UK:
- 4 tbsp soy sauce
- 2 tbsp Tabasco sauce
- 4 tbsp sesame oil
- 1 tbsp vegetable oil
- 4 tbsp clear honey
- a bit of butter

Preparation method:
1. Mix soy sauce, Tabasco, honey and sesame oil into a bowl with a spoon.
2. Put the chicken into the bowl and dip it well in the marinate sauce.
3. Leave the chicken to marinate for about 10/15 minutes.
4. Heat the vegetable oil in a pan.
5. Put the chicken in the pan and fry it until is well browned and almost cooked.
6. Take off the chicken and put the teriyaki remained in the bowl.
7. Boil the preparation into the pan for some minutes until is little reduced.
8. Add the butter and mix until the sauce became glossy.
9. Put the chicken onto a plate, pour the sauce on it and serve with rice and salad.
